Fry minced garlic in butter (or oil), then sear beef on all sides to seal-in moisture. Add all remaining ingredients except for beets and sour cream, placing cabbage on top. Cook on low 7.5 hours. Add shredded beets for last 30 minutes. Serve with dollop sour cream on top.
