Festive Quinoa with Cranberries

Quinoa dish with cumin, onion, cranberries and sunflower seeds. This recipe is super easy and very forgiving. Quinoa is very nutritious as it is a complete protein.

Ingredients

Yields: 3 servings (3 Servings)

Grams 
1 1/2 cups Quinoa 255g
1 tbsp Olive Oil 13.5g
1 1/2 tsps Ground Cumin 3g
1 Onion 110g
1/2 cup Dried Cranberries 80g
 3 cups Water or Vegetable Stock 663g
1/2 cup Sunflower Seeds 70g

Heat oil in pan, and fry the onion until tender (a few minutes). Add cumin. Rinse the quinoa then add to pan, and coat well with the oil/cumin. Add vegetable stock (or water and a little salt) and cranberries. Bring to a boil then simmer covered for 10 minutes, or until the liquid is all absorbed. Mix in the sunflower seeds.

Tips

Serving Idea • This goes really well with roasted orange squash, like butternut, acorn or pumpkin. Roast the squash ahead of time in large quantities, cut and freeze; then microwave and add, or toss in for the last 5 minutes of cooking.
