This banana bread is a great source of protein, has no additives, tastes fabulous, and melts in the mouth. Nobody will believe it is grain-free.

Ingredients

1/2 tsp Pure Vanilla Extract 2.1g
1/4 cup Brown Cane Sugar 36.25g
2 Bananas 236g
1 cup Almond Meal 95g
1/2 cup Plantain Flour 60g
1 tsp Baking Soda 4.6g
1 tbsp Orange Juice 15.56g
Pinch Salt 0.2g
1/4 cup Maple Syrup 78.75g
3 tbsps Sugar 37.5g

    1/2 cup Cream Cheese 116g
    1 cup Confectioners’ Sugar 120g
    1/2 tsp vanilla 2.1g

Preheat oven to 350°F. Grease a loaf pan and line it with baking paper. Whisk together the plantain flour, almond meal, baking soda, and salt. In a separate bowl, beat egg, vanilla extract, sugar, maple syrup, orange juice, coconut oil and (last,) the melted butter. If not using a mixer, mash the bananas then mix in. Else add bananas in pieces. Beat in the dry ingredients, and pour into pan. Immediately bake 40min. or until a toothpick comes out clean.

Tips

Ingredient Tip • You can easily sub the melted butter for coconut oil.
Storage • Keep in fridge up to 4 days, or freeze.
