Peanut Butter Swirl Buckwheat Brownies

Ingredients

Yields: 24 brownies (12 Servings)

1/2 cup Dark Chocolate Chips 84g
2 tbsps Coconut Oil 27.2g
1 Egg 44g
1 Egg White 30g
1/4 cup Coconut Sugar 50g
1/4 cup Maple Syrup 78.75g
1/2 tsp Vanilla Extract 2.1g
1/2 cup Almond Milk 131g
1/4 cup Buckwheat Flour 30g
1/2 cup Cocoa Powder 43g
1/2 tsp Baking Powder 2.3g
3 tbsps Creamy Peanut Butter 48g

Preheat oven to 350ºF. Line muffin tin. Beat the eggs and coconut sugar until fluffy. Melt chocolate and coconut oil in microwave and stir until smooth. Beat maple syrup, vanilla, and almond milk into the chocolate mixture. Gradually beat this chocolate mixture into the egg mixture. Add dry ingredients and beat well. Melt the peanut butter in microwave. Place 2tbsp batter into each cup, then swirl 1/2 tsp melted peanut butter on top. Bake 22min.
