Galette des Rois is a traditional French pie prepared with puff pastry and filled with marzipan. A “fève’ (small bean or porcelain trinket) is buried inside the marzipan. Whomever finds it becomes the king or queen. When sold, this pie always comes with one or two crowns. At home, children have fun crafting the crowns.
Preheat oven to 410F.
Place one dough circle in a metal tart or pie pan and prick with fork.
Mix all ingredients to make the marzipan and pour on top. Hide ceramic fève (at edge for a more difficult hunt.)
Place second dough circle on top, fold edges under the first circle edges, and press lightly all around to close.
Cut intersecting lines to form diamond pattern on top crust, brush with yolk (optionally mixed with a little water) and prick with fork.
Bake 35 min. until very brown.

Serving Idea • Send the youngest child under the table, cut slices, and ask the child whom should receive each slice .
