Socca is a flatbread made from chickpea flour.

Ingredients

Yields: 6 Servings

Grams 
1 cup Garbanzo Bean Flour 92g
1 tsp Salt 6g
1 tsp Ground Black Pepper 2.3g
1 cup Lukewarm Water 236.6g
4 tbsps Olive Oil 54g
1/2 Onions, Chopped Fine* 55g
1 tbsp Dried Rosemary* 3.3g* Optional

Place rimmed pan in oven and preheat to 450°F (230°C). Whisk chickpea flour, salt, and pepper, then gradually add water and 2tbsp olive oil. Optionally, add onion and/or rosemary. Swirl 1 tbsp oil all over heated pan, then pour batter into it. Bake 12-15min until firm, brush with 1 tbsp oil, and broil 2-3min.
