Ingredients

1/4 cup Water 59.15g
2 tsp Instant Yeast 8g
1 tsp Sugar 4.16g
2 Eggs 88g
2 tbsps Canola Oil 28g
 1 tsp Honey or agave syrup
1 tsp Apple Cider Vinegar 5g
1/2 cup Water 118.3g
1 1/2 cups Millet Flour 178.5g
1/2 cup Tapioca Starch 64g
2 tsps Sugar 8.32g
2 tsp Flax Seed Meal 4.34g
1 tsp Almond Meal 1.98g
1/2 tsp Salt 3g

Preheat oven to 200°F. Thoroughly line jelly roll pan. Place sugar, yeast, and warm water in a small bowl. Set aside. Mix together wet ingredients. When yeast mixture is bubbly, add it to the wet ingredients. In large bowl, beat together dry ingredients, then slowly add wet mixture and beat thoroughly. Spread the liquid batter over jelly roll pan. Turn off oven and place pan in oven to rise 50min. Remove pan from oven and preheat oven to 425°F. When oven reaches temperature, bake 15 minutes. Optionally, add toppings and bake another few minutes.
