Pressure-Cooker French Onion Soup

4 medium onions, sliced thin 440g
2 tbsp oil 27.2g
2 cloves garlic, minced 6g
1/2 tsp sugar 2.08g
1/8 tsp sage 0.091g
1/8 tsp pepper 0.299g
1/2 tsp salt 3g
1 tbsp flour 7.8g
4 cups beef broth 960g
1/2 cup red wine 123.5g
1 bay leaf 0.08g
1 cup shredded Gruyere or Emmental* 108g
French Bread** Optional

Fry onions and garlic in oil until transluscent. Add sugar and fry until onions are golden. Add sage, pepper, salt and flour and cook another minute. Add broth, wine and laurel leaf. Close and lock pressure-cooker with vent in closed position. Set to cook under pressure for 5 minutes (after vent closes). Carefully set vent to open position to release steam. Serve with Gruyère (or Swiss Cheese) and bread.
