Mousse au Chocolat

You know how Toll-House chocolate chips have a tried and true recipe for chocolate chip cookies right on the package? This is the French equivalent for chocolate mousse, from the package of Nestle Dessert Chocolate. This mousse will be as good as the chocolate you choose.

Ingredients

Yields: 6 portions (6 Servings)

Grams 
Pinch salt 0.2g
6 eggs 264g
1 1/4 cups semi-sweet chocolate chips 210g

ALWAYS check labels before buying or consuming!
Melt chocolate in double boiler. Separate yolks from whites. Beat egg whites and salt at high speed until very firm. Add a spoonful of melted chocolate to the yolks while actively mixing, then slowly mix in remaining chocolate. Fold egg whites into chocolate mixture in three batches until fully incorporated. Pour into one large or 6 small serving bowls. Refrigerate 3-6 hours until fully set.
