2-4 Shallots, peeled 90g
1/2 stick Celery 20g
1 small Carrot, peeled 50g
1 tsp Salt 6g
1 tsp Buckwheat Flour 2.5g
1 kg Chicken Thighs, skinless and boneless 1000g
3 tbsps Canola Oil, for frying 42g
1/2 cup Buckwheat Flour, for coating 60g

Cut leek and wash well. Process vegetables until finely diced, then add remaining nugget ingredients. Process until finely minced like a dough. Form balls and coat in flour. Fry until golden brown on all sides. Drain on paper towels.
